On a bustling day in Hong Kong, after rushing to catch the next MTR and weaving through the sea of people, there is not betting than comfort food. Eugene Pak, my local food guide, introduced me to Lao Mein Sapachi.

Skipping through a tight staircase, the ramen house is surely a popular dive. While smelling the aromas of fresh noodles and soy, I was ready to bypass the line.

Arriving piping hot, my pork noodle ramen (~$8USD) had arrived. With my gentle hands, I hug both sides of the bowl as a gesture of gratitude toward the chef. Ramen houses are abundant, but few can make it good.

Upon arrival, I immediately sip the soup. Sip, sip. The rich layer of pork fat provides flavor marrying the sweet savory tones of the rich broth. Every one has eats with their own technique and pace. With my left hand I hold the spoon, while my right I hold my chopsticks.

One sip of soup, then one bite of noodles cooked just right.

All the while, bamboo shoots add crunch. Tender roasted pork adds character. For a lighter soup option, try the soy sauce broth.

For appetizer, try the sushi rice rolls. Sweet notes from mayo just pair well with the seaweed and rice. Dunked in a soy base sauce, the pan fried gyoza (potstickers) are good.

An order of salted egg continued to stir my appetite. Bright tender yolk just added to comfort food heaven.

So the next time you eat ramen, take your time to savor the broth and texture in the noodles. Learning how to eat a certain dish the proper way can really enhance the meal.
