Located in a tall commercial building, Itsuko Shimada serves a good ramen. Although their broth does not rival my favorite spot Santouka, their tender stewed pork with thin layers of flavorful fat acting as flavor booster compensates slightly.

Noticeably, their creamy egg yolk has been make to perfection. Missing elements are mainly a stellar broth with savory sweet notes. Itsuko Shimada’s soup base simply lacks character.

For side dishes, their sea sweet steamed clams is a good choice.
